Q: How much does it matter if I use quick-cooking oats as compared to old-fashioned oats in a recipe?

A: It will only affect the texture of what you are making. Oatmeal cookies, for example, will not be as chunky and chewy when using the quick variety because the oatmeal has been cut and is a finer texture.
